I’m so lucky to have a rich bank of fond and warm memories when I think of Joe and the impact he had on my life, from earliest childhood and into adulthood.
As a very little girl at his heels in the Cobargo Bakery watching him with bulging eyes stirring an enormous pot of mince for his pies – and Joe asking if I was looking forward to eating one when they’re ready? Oh yes, can’t wait I let him know, to which he replied, “good, this batch will be extra tasty because I’ve added a little something special, have a look in the pot – that’s the flesh and bones from one of the local men … delicious”. It terrified me, but in the best way!
To spending school holidays with Teen in Huskisson (much fun), and Joe insisting we all get up at 6am every morning for our daily power-walk (think Grandma and Joe with matching 80's style tracksuits) – I hated it, but of course looking back on it now, twas the best of times!
There were of course the ever present tasty treats presented with pride and generosity, but none nourished the soul like one his hugs and heartfelt greetings when we visited.
Together with all of these memories was the love and adoration he showed for Grandma. It was something special, and in that area he had no issues telling the world how he felt and expressing his devotion to her. So grateful to have had him in my life, for his love, and for all the things he’s taught me along the way. He is very much missed.

Joe was a coulorful character, especially his socks, Always generous, his big Shoalhaven brekky cook ups, making things for people, quite the woodcraftsman. Joe gifted me several odd golf clubs, but with Joe tuition they worked well.
Tho he did mention that my visits to Cobargo were impacting his bottom line , something about stock shrinkage
especially meat pies & that perhaps I could be considered a tax liabilty.
Contempory accounts suggest this was fair comment
Mum just smiled her smile , said maybe wait till he has a kip before you have anymore
Joe was quite the baker, there was something about a Cobargo pie,
all his baking overs many years really, bred a good canary, played a good round, a bloke of many skills.
We will miss but never forget Joe

My fondest memory of Joe was when I worked for Vida & Joe on a Monday & Friday starting at 5am. I really was not a morning person so I was always 10 minutes late. I'd sheepishly open the side door only to be greeted with a bello from Joe "your late again Fatso" (which was not an insult but a term of endearment). There are so many stories I have of both my wonderful friends. I still have the beautiful wooden clock, made by Joe, I was gifted for my 50th Birthday. R.I.P. Joe with your beautiful Vida.

A gesture that really touched me from Joe was when I was a teenager and he showed me all the things he was making out of wood and I said (jokingly, without expecting it) that I’d like him to make me a chess table with the white and black squares to be of different native wood inlaid into the top of the table…and then a few months later he presented said chess table to me and it was a bloody day masterpiece. I proudly had that table with me until I went to Germany (couldn’t take it) but I made sure it has stayed in safe family hands since and currently resides (and takes pride of place) in mum’s loungeroom! Sending our love for our beautiful Uncle Joe. I could fill a book with memories and laughs as well as some tears throughout my life knowing Joe. My fondest memories will always be as a child with Teena and the breakfast table on holidays with Vonnie and Rick, Vida and Joe. Bringing warm bread in from the bakery for breakfast and the hours of chatting and laughter everyone shared. To hear, what are you doing kid or how are you trousers! The chillies he could eat and the reminder to always take the foil off the bottom of the most delicious custard tarts I could eat and of course the search for the best ever cheesecake. We will miss his passion for life, his love of Vida and the family and of course the warmth and character that anyone who met Joe or knew him well will miss. The end of an era for our family but through the sadness knowing that he and Vida are together again. Always remembered. Rudi, Kim and Tahnee ❤️

My sincere & heartfelt condolences to the Walsh Family. Joe (Mr Walsh) to me.. we had mutual respect & fondness which I treasure. I think of you in the crisp winter mornings, the smell & warmth of your bakery, flour on your hands, everywhere and your smile. You fed love to the whole town & district you graced (for me it was Cobargo) your fresh bread to each family, your school tuckshop orders (the only reason I went to school), your pies your pastries & all made with love! Teena & I making pizzas in the oven! Helping clean up the bakery, staying in your home with you & Vida. Sharing birthdays & milestones as we grew up. You just loved your family & community. We loved you back. A wonderful Dad to Teena & Vince, Grandad to Joseph & Harry, be at peace reunited with Vida now.. as it should be & thank you for all your memories xx Jen Kazzi (née Stuart) & family
